Job Description
Are you ready to step into a leadership role in the kitchen?
The Mercure Nottingham Sherwood Hotel is seeking a talented individual to become our next Head Chef
Key Responsibilities:
As Head Chef you will be responsible for overseeing and developing a smooth operation of a busy kitchen.
Ensure HACCP compliance within the kitchen and Food & Beverage outlet.
Ensure the kitchen equipment is in working order; report any maintenance issues.
Training and development of junior members of the kitchen team and the supervision of the kitchen.
Assist in positive outcomes from guest queries in a timely and efficient manner.
Ensure food products are of good quality and stored correctly.
Ensure the consistent production of high-quality food.
Ensure resources support the business needs through the effective management of working rotations.
Support brand standards through the training and assessment of the Team.
Control costs without compromising standards, improving gross profit margins and other departmental and financial targets.
Assist other departments wherever necessary and maintain good working relationships.
Comply with hotel security, fire regulations and all health and safety and food safety legislation.

Deliver exceptional customer experiences all the time.
Proven experience as a Head Chef or in a similar senior culinary role.
Strong leadership skills with the ability to motivate and mentor kitchen staff.
Proficient in menu planning, cost control, and inventory management.
In-depth knowledge of food safety regulations and HACCP principles.
Creativity in developing new dishes and presenting food.
Ability to work under pressure in a fast-paced environment.
Flexibility to work varying shifts, including evenings, weekends, and holidays.
