Where’s Nick is a neighbourhood wine bar and restaurant in Marrickville, known for its Mediterranean-inspired, produce-driven menu and award-winning wine list. Our open kitchen operates without a grill, deep fryer, or extraction , so we need a Head Chef who is clever, adaptable, and confident working creatively within these constraints . The Role We are open 7 days and require a Head Chef who can work independently, manage day-to-day kitchen operations, and ensure strong standards within a two-chef team . You’ll collaborate closely with the owners on menu direction, working within an established Mediterranean framework while contributing thoughtful input, delivering consistency, and guiding the CDP in day-to-day operations . The business closes for 2 weeks every Christmas, so that the team can spend time with family and friends. About You Highly resourceful - able to create excellent food without a grill, fryer, or extraction . Comfortable running solo services, washing dishes and maintaining quality across the week. A clear communicator who takes direction well and supports the CDP effectively. Key Responsibilities Collaborate on seasonal menu planning within our Mediterranean, ingredient-led approach. Manage ordering, costing, stock control, and relationships with local producers. Maintain quality, presentation, and smooth service in a small open kitchen. Guide the CDP in prep, service, organisation, and food safety. Contribute to wine dinners and producer events within agreed creative parameters. Work hands-on across all tasks - prep, cooking, cleaning, and dishes — in an ego-free team. Qualifications AQF Associate Degree, Advanced Diploma, or Diploma in Commercial Cookery, or equivalent senior chef experience (minimum 3 years). Australian work rights considered on a case-by-case basis.
