Location: Melbourne, VIC Restaurant Type: Premium Seafood & Japanese Buffet We are one of Melbourne’s fastest-growing premium dining venues, offering top-grade seafood, sushi, sashimi, grill, and hot food sections. Due to expansion and increased service volume, we are recruiting for multiple chef positions. Head Chef Key Responsibilities Lead and oversee all kitchen operations Menu development and maintaining presentation & quality standards Ordering, stock rotation, and food cost management Ensure full compliance with HACCP and Australian food safety standards Train, mentor, and manage the chef team Requirements Minimum 5 years’ experience as a Head Chef or Senior Sous chef Strong leadership in high-volume or premium dining environments Experience with premium seafood or Japanese cuisine highly desirable Excellent communication and problem‑solving ability Senior / Sous Chef Key Responsibilities Support the Head Chef in running the kitchen Lead service across assigned sections with consistency and efficiency Assist in training junior chefs and managing workflow Ensure hygiene, safety, and preparation standards are maintained Inventory control and daily kitchen organisation Requirements 3+ years as a Sous Chef or Senior Chef experience Ability to lead sections independently Experience with seafood, grill, or Japanese cuisine preferred Strong teamwork and communication skills Assistant / Kitchen Staff Key Responsibilities Food preparation and mise‑en‑place Support senior chefs across various kitchen stations Follow recipes, cooking procedures, and plating standards Maintain a clean, safe, and organised work environment Requirements 1–2 years of commercial kitchen experience Strong work ethic, positive attitude, and willingness to learn Experience with seafood or Japanese cuisine is a bonus Work with premium ingredients in a high‑end kitchen Growing restaurant group with strong long-term career opportunities Structured training and development system Stable full‑time positions with competitive salaries Please apply with your resume, and indicate which position you are applying for.
