The Fraternity Club is one of the Illawarra’s most iconic hospitality venues, offering a diverse and dynamic dining experience across three key outlets: Il Bene – our renowned wood-fired pizza restaurant; and La Taverna – the newly rebranded Mediterranean-style bistro at our sister venue, Fraternity Sports Club. With growing demand across both venues, we are now hiring Chefs at all levels, including: Pizza Chef – Il Bene (permanent and casual positions available) Casual Chef/ Cook – La Taverna at Fraternity Sports Club (casual) Duties and Responsibilities All Chef Roles Prepare and cook menu items to a high standard across bistro, pizza and Mediterranean-style offerings Assist with food preparation, service and general kitchen duties Maintain a clean, safe and compliant kitchen environment Support senior chefs and contribute to smooth daily operations Follow stock rotation, storage and labelling procedures Work effectively with both back-of-house and front-of-house teams Uphold consistent quality, presentation and service standards across all kitchens Additional Duties for Sous Chef – La Trattoria Support the Head Chef in managing daily kitchen operations Lead and mentor junior chefs and kitchen staff during service Assist with training and development across the kitchen team Help manage ordering, stock levels and food cost control Take charge of kitchen operations in the Head Chef’s absence Maintain strong communication with management to ensure smooth service and efficiency Skills and Experience All Chef Roles Previous experience in a high-volume kitchen Ability to work efficiently during busy service Strong knowledge of food safety and hygiene standards Reliable, positive and team-focused attitude Flexibility to work nights, weekends and public holidays Relevant cookery qualifications (Cert III or equivalent) highly regarded Additional Requirements for Sous Chef — La Trattoria Proven leadership experience in a similar role within a busy kitchen Ability to supervise and guide a kitchen team Strong communication and organisational skills Experience with ordering, stock control and managing operational workflows Lifestyle Advantages Paid under the Registered Clubs Award, including all penalty rates and loadings Friendly, supportive kitchen team and positive club culture Easily accessible via public transport, including the Free Gong Shuttle and nearby Fairy Meadow Train Station Opportunity for growth and career development Opportunity to work across multiple venues Access to Employee Assistance Program If you are ready to take the next step in your career and be part of a dynamic, food-driven venue, we would love to hear from you.
