About the Role As a Qualified Baker, you'll work alongside our experienced Head Baker in a hands‑on production role, helping execute our daily bake with precision, consistency, and creativity. You'll take ownership of your section, contribute to recipe development, and maintain the high standards Merlo is known for. Key Responsibilities: Produce a variety of breads and baked goods to recipe and production schedules Maintain clean, organised, and compliant work areas Collaborate with the team to meet daily prep and bake targets Ensure quality, consistency and beautiful presentation in all finished goods Assist with mentoring junior team members and apprentices Contribute ideas for innovation and seasonal menu changes What you'll bring At least 3 years experience in an artisan bakery required Strong experience with sourdough work and long fermentations Strong knowledge of baking techniques, and pastry fundamentals A positive, proactive attitude with strong communication skills Pride in your craft, workspace, and finished product Formal baking/pastry qualifications A team player who thrives in a collaborative, quality-focused environment Available for early morning starts (1-2 am) and weekend work Own method of reliable transport to get to and from work Why Join Merlo and Milano Bakehouse?
