Our Head chef of 6 years is moving out of the area. We need a Head Chef with a strong background of cooking Italian and Australian cuisine for a busy multi‑cuisine Restaurant in Far North QLD. Qualifications Must have Australian work experience as a Head Chef in a busy kitchen/restaurant. Be able to lead a team of 12 to 14 people. Be fully conversant with the health and safety regulation in Australia. Be able to work odd hours. Responsibilities Construct menus with new or existing culinary creations ensuring the variety and quality of the servings. Examine foodstuff to ensure quality. Regulate temperatures of ovens, grills and other cooking equipment. Prepare, cook and season food. Portion food, plate dishes, add gravies and garnish. Store food in temperature‑controlled facilities. Prepare food to meet special dietary requirements. Estimate and prepare food for catering orders. Work effectively as a team under pressure. Follow preset recipes, adjust them as per customer requirements, and train junior kitchen staff in basic duties. Duties Prepare, season and cook food as directed, meeting dietary requirements where required. Menu planning. Creating recipes and presentation specifications. Operate standard kitchen equipment safely and efficiently. Oversee and manage kitchen operations. Clean and organize kitchen and equipment in adherence to hygiene and safety regulations. Preserve and store foodstuffs in appropriate temperature‑controlled facilities. Train apprentices and other kitchen staff. Additional duties Record food temperature. Prepare reports for management.
