Restaurant Manager – New Italian Restaurant | Five Dock, NSW Full-time | Competitive Salary | Brand-New Venue Opening Soon We are preparing to open a new Italian restaurant in the heart of Five Dock, NSW , and we are seeking an experienced and passionate Restaurant Manager to lead our front-of‑house team. About Us Our venue brings together authentic Italian recipes, quality local produce, and modern hospitality. We aim to create a welcoming neighbourhood destination with a strong focus on service, atmosphere, and community. The Role As the Restaurant Manager, you will ensure smooth daily operations and deliver an exceptional guest experience. You will lead and develop the team, uphold high service standards, and help establish the culture of this brand‑new venue. Key Responsibilities Oversee daily front‑of‑house operations Recruit, train, and supervise service staff Ensure outstanding customer service and handle guest enquiries Manage rosters, labour costs, and staff scheduling Coordinate floor operations, bookings, and service flow Collaborate closely with the Head Chef for seamless FOH/BOH communication Monitor stock levels, handle ordering, and manage supplier relationships Ensure compliance with all health, safety, and licensing requirements Support marketing and community engagement initiatives Curate and manage the wine list and beverage menu Train staff on wine pairings, cocktail knowledge, and beverage service standards About You 2–3+ years experience in a similar management role Strong leadership and communication skills Ability to work well under pressure Excellent organisational and problem‑solving abilities Deep knowledge of Italian wines and international wine regions Solid experience with cocktails, bar operations, and beverage programs Understanding of Italian cuisine and dining culture (preferred) Current RSA certificate Must have Australian work authorisation at the time of application What We Offer Opportunity to lead a new venue from opening Supportive ownership and a collaborative work culture Competitive salary and growth opportunities How to Apply If you're a motivated hospitality professional with a passion for Italian dining, great service, and a strong beverage background, we'd love to hear from you.
