And now, we’re looking for a Senior Sous Chef who wants to shape the next chapter. The Role Lead in one of Sydney’s most iconic Italian dining rooms Work with premium produce, a wood‑fired oven, and a fully kitted‑out modern kitchen Grow alongside Exec Chef Mike Eggert and a tight, skilled brigade Be part of a pacey, energetic service where quality never drops What you’ll bring 5+ years’ experience in a high‑end wine bar, restaurant or brasserie Calm, polished presence in an open kitchen — even when the room is pumping A leader’s mindset: confident running a section, coaching juniors and elevating standards Genuine love for Italian flavours, produce and technique Wood‑fire experience is a huge bonus Communication, work ethic and integrity that set the tone for the team The Reward Competitive salary and award rates.
