Canterbury International Hotel (Part of the Celestial Capital Group hotel portfolio – soon to be rebranded as a Radisson Hotelf) Canterbury International Hotel, part of the Celestial Capital Group portfolio, is seeking an experienced and commercially minded Sous Chef / Kitchen Operations Lead to take full ownership of the hotel’s kitchen operation. This role is the most senior culinary position on site and offers a unique opportunity to play a key role in a hotel that will soon undergo rebranding to Radisson , with a strong focus on operational standards, cost discipline, and scalable systems. This position is ideal for a chef who understands that great food outcomes are driven by tight food cost control, disciplined labour management, and efficient procurement , while maintaining consistent brand-aligned quality. About the Role Reporting directly to hotel management, you will operate the kitchen as a standalone business unit within the hotel, with full responsibility for food cost performance, labour efficiency, and operational compliance across breakfast, conferencing, events, and in-house dining. Key Responsibilities Lead all day-to-day kitchen operations and service delivery Own food cost performance, GP margins, wastage reduction, and stock accuracy Manage ordering, supplier relationships, and inventory controls Develop menus with clear costing, yield targets, and brand-aligned standards Monitor labour efficiency and assist with kitchen roster optimisation Implement portion control, recipe consistency, and prep systems Supervise, train, and performance-manage kitchen team members Deliver conference and event catering within agreed budgets Ensure compliance with food safety, hygiene, WHS, and upcoming Radisson brand requirements Work closely with hotel management on forecasting, reporting, and rebranding readiness About You Proven experience as a Sous Chef , Kitchen Lead , or strong Senior Chef de Partie Previous hotel or multi-outlet hospitality experience highly regarded Strong understanding of food cost percentages, GP margins, and wage control Confident operating as the most senior kitchen leader on site Commercially minded, organised, and detail-focused Hands‑on leader with strong communication skills Ability to work a rotating roster, including weekends and public holidays Food Safety Supervisor certification (or willingness to obtain) What We Offer Senior kitchen leadership role with autonomy and accountability Involvement in a hotel rebranding to Radisson , including systems and standards uplift Support from Celestial Capital Group’s central hotel leadership team Stable full‑time position Competitive salary aligned with experience and responsibility Career growth opportunities across a growing hotel portfolio How to Apply If you are a chef who enjoys running a commercially disciplined kitchen and wants to be part of an upcoming Radisson rebrand, we would love to hear from you.
