POSITION SUMMARY
Will be required to practice skills in assigned sections to the standards set by the Sous Chef or Executive Chef. Assist and/or supervise assigned sections in absence of the Sous Chef. Train and supervise chefs at lower levels when required as well as effective communication and liaison with other departments. Conduct duties in a courteous, safe and efficient manner, in accordance with the hotel’s policies and procedures, ensuring that a high level of service is maintained.
The ability to work closely with the kitchen brigade following instruction and direction. Required to follow standard recipes and plate presentations in order to maintain quality standards of production and presentation. Display an interest in all kitchen activities and assist colleagues when possible. Able to run the day to day operation of the section in the kitchen. Required to follow standard recipes and plate presentations in order to maintain quality standards of production and presentation. Adhere to and Promote Marriott International’s Take Care Movement. Demonstrate clear behaviors and management style that align to the Property Service Culture Standards and Brand Core values. Effectively implement and support all Marriott International’s related programs. Maintain company confidentiality, ensuring that business dealings within the organization are not discussed with outside parties. Be well versed and knowledgeable of the Westin Brisbane’s Fire and Evacuation procedure. Your responsibilities relating to Workplace Health and Safety are outlined in the Work Health and Safety Act 2011 and Work Health and Safety Regulations 2011.
PREFERRED QUALIFICATION
Education: Technical, Trade, or Vocational School Degree.
Related Work Experience: At least 2 years of related work experience.
License or Certification: Culinary Certificate
