Established in 1995, Brasserie Bread is Australia's leading Wholesale artisan bakery, supplying handcrafted breads, pastries and cakes to some of the best restaurants and cafes across several states.
We are now looking for full time and experienced Pastry Team Leader to work within the Bakery team to ensure the production of bread products in accordance with recipes and hand-made artisan techniques that are specific and unique to the Company.
Responsibilities include but not limited to
Production of quality bread/pastry products as listed in the daily production sheet
Calculate and weigh ingredients for all dough types
Mix, scale, and mould all bakery products
Coaches and leads team to reach required objectives
Ensures all teams tasks are complete before leaving work
Ensures teams following recipes.
Ensures all staff are wearing appropriate PPE including hair and beard nets and follow all hygiene procedures and addresses issues if processes are not followed
Guides new employees in all processes
Assist with the preparation of weekly rosters using Humanforce/Time Target
Cross trains staff to ensure bakers can work across different functions
Attends to any safety issues immediately and notifies Operations Manager accordingly
Operate bakery equipment and machinery in a safe manner
Read the production sheet and fill in production records as required
Comply to company Code of Conduct principles, HACCP and Food Safety guidelines and ensures all HACCP and WHS procedures are being followed
You will also have the following:
Available to work weekends
Previous experience in a food manufacturing environment (baking/pastry) and experience with Food Safety and HACCP
Previous experience in a bakery preferably with hand made products
Demonstrated team leader experience
Ability to analyse and resolve production problems
Have a flexible work approach with strong communication and inter-personal skills
Experience in planning and organising, plus the ability to manage multiple tasks
Time management ability
Ability to manage all aspects of the role in a pressurized environment
Punctual and well-presented
