Located on Hobart's famous Docks, Mures has a passion for sustainable fishing and providing an exceptional Tasmanian “hook to plate” seafood experience. Mures Lower Deck is a fast-paced, high volume Seafood Bistro and Cafe open 7 days a week for Breakfast, Lunch and Dinner. We are currently seeking a Head Chef with extensive experience in a similar environment. Under the guidance of the General Manager, and leading a strong multi-skilled team; the Lower Deck Head Chef will drive the culinary aspect of Lower Deck to ensure the highest standards of food quality & presentation, achievement of all budgetary requirements and the seamless operation of the Lower Deck Kitchen at all times. Qualities Who will demonstrate care in all that they do Who is flexible, adaptable, and committed to the role and delivering results Who will embrace our workplace culture with their positive attitude and supportive leadership Who will inspire their team to do their best, work together, and provide only the highest quality products to our guests Who will thrive in our busy work environment Responsibilities Ensuring excellence in food quality and fast service at all times Ensuring product availability through clear planning and communication Staff training and development to ensure a multi-skilled culinary team Stock control & ordering, appropriate costings and management of food cost to budget Rostering and delivering labour costs to budget Overseeing all Food Safety requirements Previous experience with Seafood is advantageous but experience in a similar role or venue with high volume, fast service is essential.
