About the Role As the Head Chef / FSM, you will oversee the daily operations of our kitchen, managing a team of Trade Cooks, Apprentices, and Food Services Assistants. You will ensure the consistent delivery of high-standard meals while maintaining compliance with food safety regulations, cleaning standards, and Benalla Health’s values. You will play a key role in driving workplace culture, safety, and service excellence, while supporting the Support Services Manager in strategic and operational initiatives. Key Responsibilities Lead and coordinate food service operations to meet dietary and nutritional needs. Supervise and mentor kitchen staff, fostering a positive and productive team culture. Ensure compliance with food safety legislation, cleaning standards, and infection control guidelines. Manage stock, equipment maintenance, and budgetary requirements. Oversee menu planning, catering requests, and meal quality assurance. Respond to feedback and complaints with professionalism and care. Conduct audits and maintain accurate records. Key Selection Criteria Essential: Trade Certificate of Proficiency in Cooking and Food Safety Supervisor (Health). Proven leadership experience in managing performance and workplace change. Extensive experience in hospitality or healthcare catering. Strong knowledge of food safety standards (ISO 22000, HACCP), OH&S, and infection control. Understanding of texture-modified diets (IDDSI) and dietary restrictions/allergens. Demonstrated ability to implement and monitor food preparation processes. Desirable: Post-basic education in management or leadership. Experience training staff in food preparation and kitchen operations. Previous experience in a hospital or aged care setting.
