Rossi (Greville 162 Holdings Vic Pty Ltd), part of the Good Company Bar Group, is a premium dining destination in Prahran known for our wood‑fired Neapolitan pizza, authentic handmade pasta and curated beverage program. We are looking for a dedicated and experienced professional to join our front‑of‑house team and play a crucial role in ensuring the smooth operation of our team and dining room. The Role We are seeking a highly skilled Trade Waiter with a strong background in beverage service to manage a section within our busy dining room. This is a full‑time position suited to a hospitality professional with a passion for Italian cuisine and extensive wine knowledge. Key Duties & Responsibilities Provide a high standard of table service, including setting and arranging tables to premium dining standards. Warmly greet guests, manage reservations, and present menus and beverage lists with detailed product knowledge. Menu Provenance & Advisory: Explain complex Italian culinary terms, ingredients, and their origins to guests to enhance their dining experience. Take complex orders and accurately relay them and all guest dietary requirements to kitchen and bar staff using our POS system. Prepare and serve beverages, including opening wine bottles table‑side, mixing liquor, and assisting with cellar organization and stock control. Monitor table maintenance, clearing courses efficiently, and ensuring glassware is constantly replenished. Process bill payments and operate point‑of‑sale machines. Skills & Experience Required To be considered for this role, you must meet one of the following qualification criteria: Certificate III or higher qualification in Hospitality; At least 18 months of relevant Australian work experience; 2 years of overall relevant work experience. Ideally, you will also have: Demonstrated 2+ Year experience in a high‑volume, recognized “premium dining” venue. Strong knowledge of wines, beverages and Italian food. Proven ability to work across both floor and bar operations, with specific experience in cocktail preparation and coffee making. Excellent customer service and communication skills. Proficiency in restaurant Booking software and POS. Knowledge of food safety and health regulations.
