Mt William Holdings Pty Ltd – Grampians VIC An exciting opportunity has arisen for a talented Chef to run the daily operations and kitchen at our 7-room, 5-star country hotel, Mount William Station, located in the stunning Grampians region of Victoria. Key Responsibilities Oversee all aspects of the hotel's kitchen operations, ensuring the consistent delivery of exceptional cuisine. Often working solo with front of house and service support. Deliver 3-course fine dining experiences to a range of guest sizes (2-35), with a revolving menu, while engaging with guests for kitchen and course introductions and presentations each night. Handle cafe-style gourmet breakfast menu for in-house guests and lunch options when needed. Recruit and manage temp & contract team to assist with events catering, weddings and deliver a high-quality product for clients (50-160 pax). While engaging in menu creation, client contact and event flow and design. Work with front-of-house and service staff, providing leadership and ensuring the highest standards of customer service Collaborate with the management team to develop and implement innovative menus, farm food experiences, that showcase the best of local and seasonal produce Help maintain and expand the farm produce garden, gift shop items, and seasonally incorporating more elements through the kitchen while enhancing the guest experience while reducing costs. Maintain a strong focus on cost control, inventory management, and overall food experience development Ensure compliance with all relevant health, safety, and food hygiene regulations Foster a positive, collaborative, and professional work environment for the entire hotel team What We’re Looking For Experience as a Head Chef or talented, ambitious Sous Chef from a high-end fibne dining restaurant or 5-star hotel environment Work autonomously, responsible for all aspects of the dishes and kitchen for smaller numbers. Creative plating, ingredient use and delivering exceptional food experiences, yet fit within the Mount William style and brand. Proven track record of managing and leading a rapidly growing business, with a focus on exceptional customer service Has a strong network of hospitality colleagues in Melbourne or regionally who could assist in the execution of bigger events (bar, kitchen, service). Strong understanding of food and beverage trends, as well as a passion for using quality, locally sourced ingredients Excellent communication and interpersonal skills, with the ability to effectively lead and motivate a team.
