Head Sommelier – QT Perth – Santini Bar & Grill Join us as the Head Sommelier for QT Perth’s signature multi‑award winning restaurant, Santini Bar & Grill, where you will manage all aspects of the wine program, from curating the list to driving financial performance and elevating the guest experience. Location: Perth, Western Australia Employment type: Full‑time – Senior management Base pay range: $85,000 per year (actual pay based on skills and experience) About the Company The Event Group’s hospitality division operates QT Hotels & Resorts, Rydges, Atura, Independent Collection and the premier ski resort township of Thredbo Alpine Resort across Australia, New Zealand and Germany. Responsibilities Oversee multiple food & beverage outlets, including Santini Grill, Santini Bar & Grill, Catering & Events (C&E), In‑Room Dining (IRD) and QT Café. Curate and update bar menus, order and manage stock using FIFO, and conduct monthly beverage stock takes. Ensure compliance with liquor licensing, RSA and EVT contract agreements; lead pack‑down and team training. Manage beverage cost: optimize purchasing, control inventory and manage pouring to hit target cost percentages. Collaborate with the culinary team to create food‑wine pairings for tailored menus, special events and VIP guests. Qualifications At least 2–3 years as a Sommelier and 1–2 years in a senior role (e.g., Head Sommelier) in a high‑end restaurant. Certification: CMS Level 3 or higher, WSET Diploma (Level 4) or equivalent; Master Sommelier (MS) a significant plus. Extensive knowledge of global wine regions, varietals, vintages, winemaking and spirits. Proven record of program management, inventory control and financial performance. Exceptional communication, presentation, and team‑leadership skills with impeccable personal presentation.
