The Event Group’s hospitality division operates QT Hotels & Resorts, Rydges Hotels & Resorts, Atura Hotel brands, Independent Collection by EVT as well as the Premier Australian Ski Resort township of Thredbo Alpine Resort.About the role QT Perth's signature multi award winning restaurant Santini Bar and Grill is seeking a full time Head Sommelier. As a Head Sommelier you will be managing all aspects of a successful restaurant's wine program, from curating the wine list and procuring inventory to achieving financial targets. You will enhance the guest experience by providing expert recommendations, meticulous tableside service, and engaging storytelling about wines. This role also involves leading and training the service team on wine knowledge and service standards. You will also collaborate closely with the culinary team to create perfect food and wine pairings for tailored menus for special events or VIP guests. Ultimately, the Sommelier ensures a memorable experience for guests.Duties Oversee multiple food and beverage outlets: You'll be responsible for operations across Santini Grill, Santini Bar & Grill, Catering & Events (C&E), In-Room Dining (IRD), and QT Café on an as-needed basis. Manage restaurant operations and inventory: This includes curating and updating bar menus for Santini Bar & Grill, ordering and managing stock using FIFO Ensure compliance and team leadership: You'll be accountable for department setup, pack down, leading team members, and ensuring compliance with liquor licensing, RSA, and EVT contract agreements. Stock take Management: Lead monthly beverage stock takes to minimize loss, identify discrepancies, and inform purchasing. Beverage Cost Management: Optimize purchasing, control inventory, and manage pouring to achieve target beverage cost percentages. Skills and Experience Experienced Leadership: You need at least 2-3 years as a Sommelier, with 1-2 years in a leadership role like Head Sommelier, ideally in a high-end restaurant. Advanced Certification: Hold a Certified Sommelier (CMS) Level 3 or higher, WSET Diploma in Wines (Level 4), or an equivalent certification. Master Sommelier (MS) is a significant plus. Comprehensive Wine Expertise: Demonstrate extensive knowledge of global wine regions, varietals, vintages, winemaking, and spirits. Proven Program Management: You should have a strong track record of developing and managing successful wine programs, including excellent inventory and financial management. Exceptional Interpersonal Skills: Possess outstanding communication and presentation skills, with the ability to confidently engage guests and staff, lead and motivate a team, and maintain impeccable personal presentation.
