Specialising in premium hand rolls served fresh to order, we bring together Japanese craftsmanship and relaxed Sydney hospitality in an intimate, stylish setting. We're now seeking a passionate and skilled Sushi Chef to join our founding team. Position Summary As our Sushi Chef, you will be responsible for crafting high-quality hand rolls with precision, speed, and flair. You’ll work closely with our Head Chef and operations team to shape norimono’s food experience from the start. Key Responsibilities Prepare and assemble sushi hand rolls (temaki) to order in front of guests Ensure freshness and quality of all ingredients, especially fish and rice Maintain high hygiene and food safety standards Assist in menu development and seasonal specials Manage daily mise en place and stock rotation Contribute to a welcoming and authentic guest experience Train and supervise junior kitchen staff as we grow Ideal Candidate Minimum 1 year of experience in sushi preparation, preferably in a high-paced or open-kitchen environment Strong knife skills and knowledge of sushi-grade seafood handling Understanding of traditional Japanese techniques with a modern approach Excellent communication and team collaboration skills Calm and composed under pressure, with attention to detail Must have current working rights in Australia Japanese language skills a plus, but not required Why Join norimono?
