J.L HENDERSON & W.S HENDERSON – Kembla NSW Job Type: Permanent position | Full time position Job Description Responsibilities and Duties Develop and bring quality to Tonitto Cakes Follow and maintain Tonitto Cakes food service guidelines Competently organise food preparation as instructed, following standard recipes, weights, and measures, using a variety of measuring systems (metric, imperial) Maintain fridges – keep clean, organised and products dated Maintain dry store area – keep clean and organised and clearly labelled Communicate with Chefs regarding stock Complete Apprentice Chef Course work as required, attending scheduled classes, submitting assessments and required learning materials on time Provide regular input on menu items, specials Take direction when required from other Managers / Supervisors / Chefs Ensure all communications between sections run smoothly and with respect Demonstrate a creative flair with food Develop and implement Tonitto Continental Cakes Food Safety Program Preparation and service of food items to Food Hygiene Standards Ensure proper stock rotation in all food storage areas Maintain all work areas in accordance with Food Hygiene Standards Maintain a regular cleaning schedule for kitchens and storage areas Manage delivery and storage of goods (heavy lifting involved) Manage food service costs; ensure that all dishes are prepared to the correct recipe and quantity Reduce the amount of waste through the daily operation Record all wastage and breakages All staff are responsible for fostering positive culture towards workplace, business, and fellow employees Provide a high level of customer service Punctuality with a well-groomed appearance at all times Dealing with customer questions and complaints where appropriate and in line with company policy Become familiar with Tonitto Cakes, its services & events and be able to advise customers accordingly Report all accidents and hazards in your work area and complete all paperwork as required Flexibility with position (help in other areas when required) and on roster Skills Required Demonstrate passion and imagination for food Good mathematical skills Clear writing – recipes, notes, record keeping Multitask different jobs at a time Ability to organise self and duties for the day in accordance with the bakery schedule Master the basic tasks and move onto more complex tasks once basics are learnt to industry standards Interest in local produce and current trends in cakes and savoury items Demonstrate clear communication skills Ability to work well within a team Be able to take direction with speed and efficiency Great attitude, honesty, loyalty, and exceptional work ethic Proven ability to work alongside staff with respect and fairness Comply with all company policies and procedures General Details This Apprentice Chef position requires work on weekdays or weekends as per conditions set out in individual contract. Operation hours are 7am to 4pm Monday to Friday and some Saturdays as required, 7am to 1pm. Uniform: Clean, neat & professional appearance at all times. Tonitto Cakes will supply a Chefs jacket uniform. You are to supply chef check pants and boots. It is your responsibility to have them clean for each shift. Black oil resistant closed in boots are to be worn. Hair is to be tied back and out of face. No jewelry, fake nails or facial piercings are allowed in the kitchen due to hygiene standards.
