Our team is growing, and we are currently seeking individuals to join us in the position of Sous Chef in Bowen Basin, employed on a full-time basis. This role offers FIFO from Brisbane/Gold Coast or DIDO options.

Position Requirements:

• Minimum of 5 years’ proven experience as a Sous Chef or Head Chef in a large accommodation village/camp,
• Experience in managing high-volume catering (up to 1000 people) using Bratt Pans, Combi Ovens, deep fryers, etc.
• Exceptional kitchen and team management abilities, including dividing responsibilities and monitoring progress.
• High level of pastry and dessert preparation, with high standards of buffet food presentation and a passion for taste and garnishing.
• Up-to-date with culinary trends and optimized kitchen processes.
• Experience in external function catering and customer complaint resolution.
• Good understanding of useful computer programs (MS Office, stock management software, Food Safety monitoring program, etc.).
• Credentials in health and safety training, HACCP food Safety Management, and incident reporting and investigations.
• Sound understanding of policies and procedures including SOPs, SWPs, and IR/HR policies.
• Financial acumen and budget control, with contractual scope of works compliance.
• Outstanding communication and leadership skills.
• Enthusiasm to develop your own skills and knowledge plus those around you.
• Reliability and flexibility to change.

Minimum Criteria:

• Forklift Licence.
• Australian Trade Certification or Cert III in Commercial Cookery (essential).
• Willing to obtain or have a Queensland Coal Board Medical and Standard 11 Surface Mining Induction
• High standards of kitchen and dining room cleaning.
• Ability to understand and manage client expectations.
