Head Chef & Chef de Partie – Authentic Italian Restaurant Location: South Fremantle, WA | Classification: Hospitality & Tourism / Chef | Work Type: Full Time Welcome to NONNA'S, South Fremantle's home for authentic Italian cuisine. We are a highly regarded, established local restaurant passionately dedicated to delivering traditional, heart‑warming Italian dishes made with the freshest, highest‑quality ingredients. We are expanding our kitchen brigade and seeking two talented professionals: Head Chef and Chef de Partie. Head Chef We are seeking a dynamic and experienced hands‑on Head Chef to lead our kitchen operation. This is a crucial leadership role for someone who excels in high‑volume service and has a deep respect for genuine Italian cooking. Salary Range: $95,000 – $105,000 + Super (DOE) – salary will be discussed further during interview. Key Responsibilities Conceptual and culinary leadership: Hands‑on cooking during service, leading by example. Menu development: Creation of new dishes and exciting seasonal menus that maintain our authentic Italian identity. Financial management: Comprehensive food costing, meticulous cost control, and managing kitchen administration. Team & roster: Creating the kitchen roster and overseeing the training, performance, and overall responsibility of all kitchen employees. Quality & compliance: Ensuring stringent quality control, food safety, and health regulations are strictly adhered to. Supplier relations: Establishing and maintaining strong professional relationships with all food suppliers. Requirements Proven experience in a Head Chef or Senior Sous Chef role, ideally within an authentic Italian environment. Exceptional culinary skills with extensive knowledge of traditional Italian techniques. Chef de Partie We are looking for a skilled and energetic Chef de Partie to take ownership of a key station in our kitchen. You will work closely with the Head Chef, contributing to the high standards of execution and consistency we are known for. Salary: to be discussed in person. Key Responsibilities Managing and running a designated station (e.g., Pasta, Grill) efficiently during all services. Preparation of all 'mise en place' to the highest standard. Maintaining strict hygiene and cleanliness protocols for your section. Working collaboratively with the rest of the kitchen team. Requirements Proven experience as a Chef de Partie or strong Demi Chef in a busy, high‑quality restaurant. Ability to work efficiently, cleanly, and calmly under pressure. A positive attitude and passion for Italian food are essential.
