Overview The role of our Sous Chef will require you to have a versatile, self‑driven and motivated outlook with a strong background working in a busy, high‑volume setting and a focus on detail. You will be required to support and collaborate with the kitchen team under guidance from the Executive Chef to create and implement innovative menus, maintain standards and expectations with a focus on quality that supports the customer experience. Work in a team, demonstrate strong leadership skills, support and mentor a full‑time and casual workforce, provide professional development opportunities and lead by example. This permanent full‑time role is based in Randwick, reporting directly to the Executive Sous Chef. Opportunity Based at Royal Randwick Racecourse and reporting to our Executive Sous Chef, you will join an established team to deliver a wide cross‑section of culinary offerings from Retail to A‑la‑Carte Fine Dining across our five venues. Responsibilities Customer Experience – drive a culture of consistent customer excellence, ensuring a seamless experience. Operational Excellence – prepare, cook and present various foods, contribute to menu concepts and recipe development, and ensure all aspects of kitchen functionality are maintained. People Leadership – supervise the team, provide constructive feedback and drive high performance. Finance – with the support of the Executive Chef work towards budgets and COGS. Innovation – contribute new ideas and ways of improving current processes. Safety – manage HACCP, ensure hygiene is upheld and prioritise team member safety in the kitchen. Qualifications A strong alignment to the ATC values: Collaborate, Care, Achieve and Innovate. Formal qualifications in Commercial Cookery. 5+ years' experience working in a large‑scale business or business with multiple venues. Knowledge of current food prep and food service management methods and techniques. A solid understanding and application of relevant legislation. Demonstrated experience supervising, mentoring and driving teams. Exposure to working to and/or managing COGS.
