Your Role As Restaurant Manager, you will oversee the daily operations of Bommie Restaurant, setting the standard for luxury dining and ensuring seamless execution in a high-end resort environment. Where you’ll make an impact Lead, train and mentor a high-performing front-of-house team to uphold luxury service standards. Manage all aspects of daily operations: guest service, staff scheduling, inventory, cost control, and logistics. Provide exceptional guest experiences and address any inquiries or concerns with polished professionalism. Ensure health, safety, hygiene and liquor licensing compliance. Collaborate with executive chef and sommelier in curating menus, wine pairings and special events (e.g., degustation evenings, private dining). Maintain presentation standards, ambience and guest journey from arrival to departure. Foster a positive team culture: recognise achievements, drive engagement and support continuous improvement. Assist in planning and executing VIP experiences, group bookings and upscale private dining in our intimate dining room. What we’re looking for You are an experienced hospitality professional passionate about delivering top-tier dining experiences. You thrive in a refined, fast-paced environment and have the leadership capability to inspire your team. To be successful you will need: Previous experience in a managerial or senior supervisory role within a luxury resort restaurant or fine-dining venue. Exceptional leadership, communication and problem-solving skills. Ability to multitask and maintain high standards in a dynamic, high-pressure setting. Nationally Recognised Responsible Service of Alcohol (RSA) Certificate (Essential). Valid Driver’s Licence (Essential) — Hamilton Island roster may require mobility across resort operations. Food Safety Supervisor Certificate (Essential). Flexibility with roster patterns, including evenings, weekends and split shifts. A keen eye for detail and an unwavering commitment to delivering remarkable guest experiences.
