A new pub‑style venue is opening inside Melbourne Airport Terminal 1, and we're looking for an experienced Head Chef to lead the kitchen team. This is a full‑time opportunity for a chef who thrives in fast‑paced service, values strong systems, and enjoys delivering consistent, approachable food in a high‑traffic environment. About the Role The venue will operate 6:00am–9:30pm, offering classic pub favourites and a breakfast menu from 6:00am–12:00pm. You must be available to work rotating shifts to cover the venue's operating hours from 6:00am to 9:30pm. Responsibilities Overseeing all services: breakfast, lunch, and dinner Leading, training, and supporting the kitchen team Ensuring consistency, quality, and food safety standards Managing stock, ordering, and kitchen organisation Maintaining efficient systems and a positive team culture Ensuring compliance within a secure airport environment (including police checks) Obtain and maintain a valid Aviation Security ID for airport compliance As this is a new opening, you will also have the opportunity to help establish the kitchen routines, systems, and standards from day one. Qualifications Full working rights (mandatory) Previous experience as a Head Chef, ideally in pub, casual dining, or high‑volume venues A minimum of 1‑2 years of Head Chef experience is required Airport or travel‑hub experience (advantageous) Strong communication, leadership, and problem‑solving skills Proven ability to run a structured, efficient, and consistent kitchen A calm and reliable approach to service in high‑pressure environments This role suits a Head Chef who enjoys running a tight, well‑coordinated kitchen and takes pride in delivering high‑quality pub food at volume.
