Palomar is Paddington's newest restaurant, inspired by Southern European, North African, and Levantine flavours, led by Culinary Director Mitch Orr. Our wine list explores a concise selection of Mediterranean regions, while also incorporating a selection of well known Australian producers. Next door, our sister venue, the Mulwray reflects a more eclectic selection of Australian and French wines, with a heavy focus on minimal intervention, biodynamic producers and intentional winemaking. Our Head Sommelier, Eleonore Wulf has approached both lists with the philosophy of celebrating both local and international producers, with a focus on sustainability, craftsmanship, and discovery. COME AS YOU ARE & SHARE YOUR TALENT As a Junior Sommelier, you will support our Sommelier team and front-of-house team in providing expert wine service and maintaining our cellar. You’ll play an important role in enhancing the guest experience through confident recommendations and an enthusiasm for sharing knowledge.
