Job Overview Reporting to the managing director, this is a leadership role in our busy Italian eatery focusing on hand‑made wood‑fired pizzas and handmade pasta prepared with fresh, high‑quality ingredients and traditional techniques. Responsibilities Jointly manage kitchen operations based on shifts. Ensure production schedules are followed. Ensure stock rotation to minimise wastage. Maintain kitchen and equipment clean and sanitised, comply with all health and safety regulations. Monitor and control food costs within budgets. Manage kitchen for optimum production and quality. Plan menus for weekly specials. Order supplies and ingredients. Prepare and cook all items according to menu. Keep kitchen organised and clean. Research and develop recipes. Test and taste recipes. Supervise and train other chefs and kitchen staff. Coordinate with floor staff and management. Report to Managing Director. Qualifications & Experience Italian culinary ability and creativity. Good knowledge of ingredients. Strong background in kitchen hygiene and food safety. Great attention to detail. Stamina to work long hours performing physically demanding tasks such as rolling and kneading for pizza. 3‑5 years experience working in Italian cuisine. Competency in all aspects of pizza and pasta production. Demonstrate team respect and the ability to manage your section. Knowledge of kitchen hygiene and HACCP regulations.
