Venue Manager – The Florence New Late-Night Italian Wine Bar | Flinders Lane, Melbourne CBD $90,000 Salary + Super | Opening February 2026 The Florence is a brand-new, modern late-night Italian wine bar opening this February in the heart of Flinders Lane, Melbourne CBD. Part of the Valarc Group — an expanding Melbourne-based hospitality group known for high-quality venues — this is an exceptional opportunity for an experienced Venue Manager to lead the opening of a flagship new venue from day one. This role is ideal for a hospitality professional with a deep passion for Italian wine, premium produce, and best-in‑class service. About the Role End-to-end venue operations and service leadership Development and ongoing management of the Italian-focused wine list Delivering warm, polished and consistent guest experiences Staff recruitment, onboarding, training and performance management Rostering, wage control and labour optimisation Stock control, ordering, supplier relationships and COGS management Financial reporting, budgets and KPI performance Compliance with OH&S, liquor licensing and workplace regulations Driving venue culture, standards and team engagement About You Minimum 3 years’ experience as a Venue Manager in a premium hospitality environment Extensive wine knowledge essential, with strong expertise in Italian varietals Genuine passion for high-end food, wine and hospitality Proven ability to manage wage costs, stock and overall profitability Exceptional leadership, communication and people management skills Confident in fast-paced, late-night trading environments Available to work weekends and peak trading periods What’s on Offer $90,000 + superannuation Lead the opening of an exciting new CBD venue Work with the growing Valarc Group across multiple premium venues Long-term career progression and development opportunities Sponsorship opportunities available for the right candidate Start Date Early February 2026, but employment can be offered in sister venues as early as necessary. #J-18808-Ljbffr
