About the role: Owing to business growth, we are seeking 1 full time chef de partie to join our team at Sea West WA Pty Ltd, based in Mandurah. Sea West is a marine tourism company, operating as Mandurah Cruises and Rottnest Cruises. For the food side of our business, we offer river lunch cruises, seafood cruises and catered functions. Reporting to our renowned head chef, Tony Howell, you'll play a key role in preparing delicious food for our customers on these cruises, working in both the kitchen and on our boats. You will join a very supportive, close knit team and will work closely with Tony and the onboard crew. You will prepare food in front of customers, so must be comfortable interacting with our guests. This role is suitable for someone early on in their culinary career, who could benefit from the training and development opportunities we offer. What you’ll be doing: Prepping in the land-based commercial kitchen, and cooking onboard Ensuring adherence to all food safety and hygiene standards Maintaining a clean and organised kitchen and vessel galley Working as part of a boat crew Participating in menu planning and development Ordering and managing food stock and inventory Adhering to all health and safety regulations and keeping required food safety records. What we’re looking for: Keen to learn and develop A passion for quality, and creating delicious food using fresh, local produce (often seafood) Must love the water/ boats (but no marine experience is needed, we will train you) 2+ years experience as a chef/ cook in a commercial setting Ideally, at least Cert III qualified Strong attention to detail A commitment to maintaining high standards of food safety and hygiene Excellent communication and teamwork skills Must be available weekends and holidays Must be able to drive, have own car, and reside close enough to comfortably have a work base in Mandurah.
