About the role Farro requires a Head Baker to consistently improve our existing products, manage our sourdough mother. Our concept focuses on spelt flour and the bulk of what we offer revolves around this grain. The role will also involve developing new spelt based product to expand our offering. The Head Baker will be primarily responsible for educating, training, and ensuring consistent excellence of the food coming out of our kitchen. We have a growing wholesale range, and the Head Baker will also be expected to participate in the development of these products. Responsibilities and Duties Continuously ensure and review delivery of excellent standards in the venue kitchen. Assist in building and retaining a strong, reliable and competent kitchen team. Provide and develop the kitchen training processes. Delegate tasks and responsibilities to appropriate team members. Creation of recipes and menu concepts in collaboration with the kitchen team. Prepare and cook ingredients to deliver top-quality Italian dishes (Pizza & Pasta), which includes being able to hand stretch pizza dough and operate a wood / fire / gas / electric pizza ovens. Effectively manage the food pass operation during service. Effectively manage the food storage facilities to a professional food safety standard level. Monitor food cost and ensure all kitchen orders of food and supplies are placed in a timely manner. Ensure all kitchen sections, including pasta sections, are fully ready to run the service at the opening time. Check all kitchen delivery invoices, and ensure quality control of goods in kitchen storage units. Proficiently lead events, e.g., set menus, canape functions, event days. Ensure the kitchen complies with WHS requirements and all other relevant regulations. Follow and comply with the Food Standards Australia and New Zealand Code. Consistently demonstrate professional and operational development between performance reviews. Manage the addressing of issues in kitchen standards audits. Identifying operational and preventative maintenance issues. Maintain a high and consistent standard of product and personal presentation. Effectively collaborate with and take direction from the kitchen, venue and group management teams. Uphold and promote positive morale across the kitchen team. Communicate efficiently and transparently with all stakeholders you interact with. Participate effectively in group training programs and initiatives as may be communicated to you from time to time for the purpose of team-building, career development and growth. and any other duties and responsibilities assigned or delegated to you from time to time and which are within your skills, qualifications and competencies. Experience & Qualifications AQF Certificate III and IV in Commercial Cookery, Retail Bakery or equivalent. AQF Associate Degree or Advanced Diploma in Hospitality Management or equivalent. At least four years of experience as a qualified baker. Experience in Italian cuisine (Pizza & Pasta) highly desirable. Salary Salary will be between $80,000 and $90,000 per year plus superannuation.
