Commis Chef – Pre-opening with Crowne Plaza Melbourne Carlton Join IHG Hotels & Resorts to support the launch of Crowne Plaza Melbourne Carlton, a vibrant cosmopolitan hotel in Melbourne’s Innovation District. The property will feature Fico, a new Italian restaurant offering a unique culinary experience, alongside flexible conference and private dining spaces. A little taste of your day‑to‑day Assisting in the preparation of a diverse range of meals, including breakfast, lunch, dinner, and special menu items, adhering to standardized recipes and portion sizes. Ensuring all food items are of the highest quality and cooked to the required specifications, maintaining consistency in taste, presentation, and texture. Monitoring and managing inventory levels of food and kitchen supplies, ensuring timely requisition of items as needed. Maintaining a clean and organized kitchen workspace, following proper sanitation and food safety guidelines. Adhering to all relevant health and safety regulations, including safe food handling, storage, and preparation techniques. Coordinating with other departments, such as banquet and catering, to fulfill special orders and dietary requirements. Conducting regular quality control checks to ensure the freshness, taste, and appearance of food items. Collaborating with the front‑of‑house staff to ensure efficient food delivery and guest satisfaction. What we need from you Experience working in an Italian restaurant or with Italian cuisine is highly regarded. Formal qualifications and demonstrated experience in a similar role in a busy restaurant or hotel. Sound working knowledge of various cooking techniques, ingredients, and kitchen equipment. Strong knowledge of food preparation techniques and cooking methods. The ability to work efficiently under pressure and to prioritise tasks effectively. Excellent communication skills and the ability to collaborate effectively with other departments and staff. A commitment to maintaining high standards of food safety and hygiene. A passion for food and a desire to continuously learn and develop new skills.
