Position Summary Assist the Chief Steward in managing the Stewarding Department as an efficient and productive cost centre. Maintain an organized and clean back‑of‑house area and provide all kitchens, outlets and banquets with clean operating equipment based on expected business levels. Actively manage the hotel's overall waste management, promote energy and water conservation, and ensure compliance with environmental initiatives. Responsibilities Implement and maintain an effective recycling program. Track detailed waste removal (landfill & recycling) and enter monthly data into the international Capella Hotels and Resorts database. Attend and participate in the monthly Green Team meetings, driving communication and engagement on recycling activities. Liaise with chemical and cleaning companies on all service matters. Handle all internal customer complaints and inquiries courteously and efficiently, ensuring satisfactory resolution. Ensure waste is disposed of regularly in the correct manner. Monitor all stewarding operations, especially during peak periods, making adjustments where necessary. Control stock and par levels in all areas under the Stewarding department. Conduct periodic walkthroughs in all stewarding areas. Collect, separate and recycle waste from throughout the hotel, including designated back‑of‑house lift landing areas and pantries. Qualifications General Education Certificate or Diploma. Experience in a similar role at luxury hotels or resorts. Knowledge of chemicals and cleaning machinery is an advantage. HACCP knowledge and/or Food Safety Program knowledge. Computer proficiency, including Microsoft Office Suite (Word, Excel). Familiarity with Canva for creating training materials, team communications, or visual content is advantageous. Good command of written and spoken English. Valid working rights in Australia.
