Whether your visit is for business or pleasure, a warm and friendly team awaits you Position Chef De Cuisine (qualified Caymanians, status holders or permanent residents) Responsibilities Assume leadership role in production, execution and overseeing the Culinary Department; banquets and other resort culinary activities. Maintain a commitment for guest service and employee development. Maintain the highest quality while managing food cost and daily sanitation best practices. Oversee all production and service of food in all kitchen areas of the Sunshine Grill & Resort. Train and lead kitchen employees in proper preparation of menu items, equipment use and safety. Inspect, select and use the freshest fruits, vegetables, meats, fish, fowl and other food preparation of all menu items. Observe expediting flow of all kitchens; make adjustments to adhere to control procedures for cost and quality. Maintain knowledge of local competition and general industry trends. Train and develop all Kitchen staff to ensure career growth. Oversee weekly and monthly inventories. Monitor proper receiving, storage and rotation of food products in compliance with Cayman Island health department regulations. Continuously review menus and items, coordinating with the Executive Chef to update menus, recipes, specifications and production forecasts. Schedule kitchen staff for proper coverage, keeping payroll costs in line with productivity forecasts. Ensure all kitchen equipment is clean and in proper working condition, coordinating with Engineering for maintenance. Create and maintain a highly functional, teamwork‑oriented back‑of‑house team. Assist the Executive Chef with special projects as assigned. In the absence of the Executive Chef, assume all duties of Executive Chef. Monitor outlets during peak periods to oversee production flow and presentation. Maintain vacation schedule for proper staffing. Report equipment requiring repair to Engineering for service. Perform duties of Manager On Duty Program as necessary. Qualifications Degree in Culinary Arts or related field; equivalent combination of education and experience acceptable. At least 5 years of previous experience in kitchen leadership with proof of results. Culinary school training required. Prior experience as Chef De Cuisine with knowledge of international and domestic dishes. Must read, write and speak English efficiently. Flexibility to work day and/or evening shifts, weekends, public holidays, and on call at all times. Compensation Salary package (subject to individual qualifications, experience and location).
