Situated conveniently at the base of Tamborine Mountain just 15 minutes from Beenleigh, Yarrabilba, Yatala, Canungra, Logan & Beaudesert. Well established venue with solid kitchen, we are requiring a skilled and experienced Chef de Partie and a Cook to join our team. Chef de Partie Salary: AUD 76,515 – $78,000 Major Responsibilities and Tasks: Prepare full range of foods according to the Bearded Dragon Boutique Hotel menus and standards. Prepare, serve and store food items in regard to the requirements of our Kitchen. Monitoring quality of dishes at all stages of preparation and presentation. Freeze and preserve foods according to the requirements of our Kitchen. Planning menus, estimating food and labour costs, and ordering food supplies. Comply with the regular cleaning and waste disposal practices at the kitchen. Monitoring, ordering and managing stocks. Monitoring portion and waste control to ensure hotel profit remain positive. Establish and maintain effective employee working relationships with other staff. Maintain good communication between hotel and kitchen staff and within the Kitchen. Liaise, supervise and work with cooks and to assist them to ensure safe and efficient production of food, while maintaining all statutory requirements. Supervise and assist the kitchen staff in the absence of Executive Chef. Discussing food preparation issues with Executive Chef. Train the kitchen staff. Ensure all our policies and procedures, health and hygiene requirements are adhered to. Qualifications: AQF Certificate IV in Commercial Cookery or equivalent of 3 years of work experience to substitute for the formal qualifications listed above. Minimum of 3 years of experience as a Chef in similar capacity. Ability to multi-task. Ability to work effectively and efficiently in a team environment. Willing to work under pressure. Good knowledge of policies and procedures in workplace. Attention to details. Strong work ethics. Experience in similar role. Excellent physical condition and stamina. Cook Salary: AUD 76,515 Major Responsibilities and Tasks: Set up workstations with all needed ingredients and cooking equipment. Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.). Examining ingredients and foodstuffs to ensure quality. Preparing, cooking and presenting a range of dishes. General and specialised cooking duties. Seasons food according to recipes or hotel needs. Portions, arranges, and garnishes food based on client preference. Daily kitchen temperature & equipment/stock checks. Changing and creating menu with Head Chef when required. Make adjustments to food items to accommodate guests with allergies or specific diet concerns. Ensure all meals are prepared and presented in a professional manner. Keep a sanitized and orderly environment in the kitchen. Ensure all food and other items are stored properly. Maintaining and rotating stock. Communicate effectively with customers and fellow staff. Practising proper workplace health and safety procedures. Supervising and training other cooks, apprentices and other kitchen employees when required. Respond to customer requests in a professional and timely manner. Assist in maintaining customer service standards set by the Employer. Qualifications: AQF Certificate III in Commercial Cookery or equivalent of 3 years of work experiences as a Cook. Minimum of 3 years of experience as a Cook in similar capacity. Ability to multi-task. Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.). Attention to details. Ability to follow all sanitation procedures.
