About Us William Wallace Group is a Brisbane based hospitality business specialising in offsite catering and venue catering management. About You Qualifications & Experience Certificate III in Commercial Cookery 3+ years' experience in a high end restaurant, catering business or 5 star hotel. Drivers license (preferred but not mandatory). Driven to perform at the highest level. Excellent attention to detail. Time management, communication & planning skills. Position Summary As the Sous Chef you are second in command, involving significant responsibility. You are to lead other kitchen workers, remain organised, professional and report vital information to the Head Chef. As the Sous Chef you will assist the Head Chef and take their place when they cannot be present in the kitchen. You are required to be familiar with all daily operations of the kitchen, and be able to perform any task in the kitchen if needed. Key Requirements Adequate professional experience in a good quality restaurant Excellent communication skills written and verbal Knowledge of legal requirements for health and safety, environmental health & food safety Strong client relationship and people management skills, with the proven ability to develop trust and credibility A sound understanding of current trends and consumer requirements Confident communication skills Ability to multi task and work under pressure Ability to generate ideas for business improvement High levels of enthusiasm, energy and resourcefulness Excellent planning, organisation and computer skills High degree of accountability and attention to detail Persistent approach to time management Excellent interpersonal skills and intuition Job Responsibilities Work closely with the Head Chef to consistently deliver an exceptional dining experience. Prepare menu items as per recipes, kitchen standards and food safety requirements. Maintain food safety compliance. Work in the production kitchen as well as at offsite events and venues. Oversee the production kitchen's requirements & the execution of offsite events under the guidance of the Head Chef. Train & oversee kitchen team members. Maintain company software for recipes, costings, food safety & purchasing.
