Nicks Restaurant Group is looking for experienced BAR SUPERVISOR to join this respected and established restaurant group. We are looking for complete professionals who have the ability to work alongside their team and strengthen what has already been instilled. Located in Cockle Bay, this waterfront venue specialises in the freshest Seafood Sydney has to offer. Responsibilities To report for duty punctually wearing the correct uniform at all times. To maintain a high standard of personal appearance and hygiene at all times. To assist in all pre-meal briefings and communicate customer history and provide feedback. To provide and maintain a high level of professional service at all times. To understand and use the correct bar terminology. To set the bar to the required standards within a reasonable amount of time. To ensure all required equipment for wine and beverage service is clean and ready for use before each meal period. To restock the bar fully after each service. Knowing where each product is located will enable you to work efficiently while eliminating the need to stop and think about where something is. To have or acquire full working knowledge of all cocktails and beverages, with special attention given to Australian wines. To have or acquire full working knowledge of coffee making, coffee drinks and espresso machine operations. To serve all beverage according to the standard sequence and the restaurant’s service policies and procedures, while overseeing the bar operations during service. To prepare and control food and beverage requisitions for the bar. To monitor and log all glassware breakages. Vital to our operation is the maintenance of glassware. To communicate with each other and Management what glassware the bar is low in supply of and what type and amount of glassware the bar needs. To ensure the correct measures are dispense and spoilage is monitored and logged on a daily basis. To be present during monthly Stocktakes, and assist where needed. To take a keen interest in the profitability of the restaurant by keeping a strict control of all expenses. To have a complete understanding of and adhere to the restaurant’s policy relating to Fire, Hygiene, Health, Safety and Responsible Service of Alcohol. To assist in all opening and closing duties and preparation for the next shift as directed by Management. To maintain par levels of all Bar Stock and place weekly orders when necessary. Train all new bar staff proper bar procedures. Conduct monthly training sessions with all bar staff. To carry out any other reasonable duties and responsibilities assigned, as may be advised by the Manager, Assistant or Supervisor. We are offering a base salary between $76,515 - $80,000.
