We are a family-owned, Italian restaurant based in East Perth. We were opened in October 2015 by our chef Francesco Lucisano, a veteran of many years of Italian culinary experience from all over the world. Since day one, we have always selected the best quality ingredients for our customers, importing from Italy every week. Our mission is to deliver the best quality dishes to customers with passion and love, considering as a part of the family all of our customers and our staff members too. We want to bring to Perth the best and finest in Southern Italian tradition. Maruzzella is looking for a full-time Chef to join our kitchen brigade. As a Chef, you will be in charge of kitchen operations and running a specific section during service hours. You will be required to ensure the completion of tasks by kitchen staff, within a timely manner and to ensure that the service runs smoothly. During non-service hours, you will be assigned to scheduling tasks for the brigade and to ensure their completion is of the right standard. You must be able to work both independently and in a team situation. You will also be responsible for the management of staff members and overseeing their progress. Duties include Preparing meals from scratch according to traditional recipes Quality control of menu items Preparing ingredients before service starts (e.g. cooking vegetables, preparing creams, slicing and storing cold meats in accordance with food safety standards, etc.) Planning menus and weekly specials according to seasonal availability Creating and preparing food to meet special dietary requirements Controlling preparation and storage of gluten free menu items to avoid contamination Being in charge of inventory of food and ingredients, and supply stock Regulating temperatures of ovens, grills and other cooking equipment as required Storing food in temperature-controlled facilities in accordance to food safety standards Hiring, training and managing kitchen staff Staff rostering Monitoring processes to maintain consistency in quality, quantity and presentation Maintaining and enforcing food safety and hygiene in the designated section/s Requirements Relevant AQF diploma or higher qualification (or overseas equivalent) and years of relevant work experience OR at least 3 years of relevant work experience if not holding a qualification Knowledge and expertise of Italian cuisine Excellent organisational and time management skills Job Types: Full-time, Permanent Pay: $76,515 – $77,500 per year Schedule: 8 hour shift Experience: Kitchen: 1+ years (Required) Work Authorisation: Australia (Preferred) #J-18808-Ljbffr
