Mandarin Oriental, Vienna: Executive Sous Chef Opportunity

We are seeking a highly skilled and experienced Executive Sous Chef to join our Pre-Opening Team at Mandarin Oriental, Vienna. Located in a heritage building, the hotel will feature 151 guestrooms and suites surrounding a courtyard, along with a restaurant, bar, and outdoor garden.

Key Responsibilities:
  • Develop forecasts, plans, and departmental production reports, while contributing to the creation of the annual hotel budget and setting departmental goals
  • Ensure accurate and up-to-date calculations and documentation of all dishes prepared and sold in Food and Beverage areas, and guarantee that expenses, purchases, and orders remain within budget limits
  • Manage daily kitchen activities, plan and assign work, and establish performance and development goals for team members
  • Promote mentoring, coaching, and regular feedback to develop and improve team members' performance, and train them according to brand standards, service behavior, and legal regulations
  • Foster teamwork and high-quality service through daily communication and coordination with other departments
  • Engage guests and gather their feedback to enhance food quality and presentation, as well as resolve any guest-related issues regarding kitchen services
  • Support the Executive Chef in menu planning, coordination of food and beverages, table arrangements, and decoration options
  • Ensure that all menu items are prepared and presented according to established recipes and standards, while developing menu designs and concepts for all Food and/or Bar areas and catering events
  • Monitor competitors and industry trends to continuously improve offerings
  • Maintain procedures for food safety and proper storage of food, beverages, inventory, and equipment, refill stocks on time, and minimize waste
  • Guarantee that all kitchen equipment and storage rooms are in good working order and are regularly cleaned
  • Oversee and ensure compliance with hygiene and sanitation standards in the hotel, as well as adhere to legal regulations, brand standards, and company policies
Requirements:
  • Culinary Arts degree or certification
  • Several years of experience as a chef, with at least one year as an Executive Sous Chef in an international luxury hotel
  • Creativity and passion to stay up-to-date with the latest culinary trends
  • Preferably experience in Western cuisine
  • Excellent communication and interpersonal skills
  • Exemplary stakeholder management skills
  • Able to work with people from diverse demographic groups and cultures
  • Enjoy interacting with guests, colleagues, and third parties
  • Self-motivation and drive
  • Excellent German and English language skills (reading and writing)
  • Good mathematical foundation, including experience in budgeting and profit/loss concepts
