We are currently seeking a skilled and passionate Demi Commis (Sushi Chef) to join our Cold Kitchen team and support the preparation of high-quality sushi and cold dishes. Key Responsibilities Assist Contribute to menu development and innovation by proposing new sushi and cold-dish concepts, identifying seasonal ingredients, and providing input on flavour profiles, plating ideas, and ingredient pairing trends. Assist the Chef de Partie (Cold Meal) in planning and refining menu items, ensuring dishes align with the restaurant’s Japanese culinary standards and customer expectations. Provide accurate prep-yield information and workflow observations to support the costing of food and labour, helping senior chefs maintain cost efficiency. Monitor ingredient freshness, quality, and presentation at every stage, ensuring consistency in taste, texture, and visual standards set by the Head Chef. Assist with procurement processes by reporting stock levels, identifying high-usage items, suggesting seasonal ingredient substitutions, and alerting senior chefs to supply issues. Coordinate with the Chef de Partie, Head Chef, and service team to address food preparation issues, adjust dish execution during peak service, and maintain smooth communication between kitchen and front-of-house. Execute complex sushi and cold-dish preparations involving precise knife work, temperature control, curing, seasoning, and plating in accordance with established standards. Ensure all food safety, hygiene, and storage procedures are strictly followed, conducting daily checks and reporting non-compliance or hazards to senior chefs. About You Experience working in a Japanese restaurant or specialised sushi kitchen. Strong knife skills and knowledge of sushi and sashimi preparation techniques. Understanding of Japanese ingredients, flavour profiles, and cold kitchen processes. Ability to work efficiently in a fast-paced kitchen environment. Commitment to maintaining high standards of cleanliness, food quality, and presentation. A positive team attitude and willingness to learn and grow under senior chefs. Why Join Us?
