Permanent full time position Rotating shifts including AM PM and weekends This is a hands‑on role where you will lead by example supporting the Head Chef in day‑to‑day operations across breakfast service restaurant dining and functions / events. About the role As Sous Chef you will play a key role in supporting the Head Chef to deliver exceptional food experiences across the hotel. This is a hands‑on leadership role where you’ll be actively involved in service while also overseeing kitchen operations mentoring the team and ensuring the highest standards of quality presentation and safety. You’ll have the opportunity to showcase your creativity in menu execution contribute to the smooth running of high‑volume events and help shape the guest experience from morning through to evening functions. With a strong focus on teamwork organisation and consistency this role is perfect for a motivated chef ready to step up and make an impact in a fast‑paced hotel environment. Core Functions of your role Prepare and manage efficient staff rosters aligning labour costs with business needs and revenue targets. Overseeing daily kitchen operations with a focus on breakfast and functions. Assisting with menu planning costing and stock control. Leading and mentoring junior kitchen team members. Ensuring food quality consistency and presentation are always of the highest standard. Maintaining compliance with food safety hygiene and OH&S requirements. Working closely with the Head Chef and F&B team to deliver an exceptional guest experience. About You Previous experience as a Sous Chef or strong experience as a Chef de Partie looking to step up. Proven ability to manage breakfast and/or functions service. Strong organisational skills with the ability to multitask under pressure. A genuine passion for food creativity and delivering memorable experiences. Leadership skills to inspire coach and develop your team. Flexibility to work across early mornings weekends and events as required.
