RESTAURANT MANAGER | HATTED RESTAURANT | BOTTARGA BAYSIDE Join Our Dynamic Team at Bottarga – Venue Manager Are you passionate about leading exceptional dining experiences in a high-end, intimate setting? Bottarga — a one-hatted, award-winning fine dining restaurant — is seeking a dedicated and experienced Venue Manager to join our Front of House leadership team. Position: Venue Manager As our Venue Manager, you will oversee the day-to-day dining room operations, ensuring refined, seamless service while upholding Bottarga’s standards of excellence. You will work closely with the owners, who are hands‑on and present in the business , and lead a small, tight‑knit team that operates more like a family than a workplace. Qualifications & Skills Proven experience in a leadership role within fine dining or premium hospitality. Exceptional interpersonal and communication skills. Strong understanding of wine and Italian cuisine (sommelier knowledge a bonus, but not essential) Ability to lead, train, and motivate a small team with care and consistency. Excellent organisational skills with strong attention to detail. A genuine passion for guest experience and warm, attentive hospitality. Flexibility to adapt to changing service needs and operational demands. Confident in managing bookings, floor plans, and service flow. Key Responsibilities Oversee daily FOH operations to ensure smooth, elegant service. Lead pre‑service briefings and ongoing staff training. Manage reservations, dining room flow, and guest communications. Deliver warm, personalised hospitality and handle concerns with professionalism. Collaborate closely with the kitchen for timing, menu communication, and service cohesion. Maintain the venue’s atmosphere, cleanliness, and presentation standards. Assist with rostering, onboarding, and staff development. Work directly with the owners to uphold Bottarga’s culture, service philosophy, and operational goals. Support a world‑class wine program featuring more than 400 labels and an exclusive temperature‑controlled cellar.
