The Venue Warm and welcoming, Fred's , on Paddington's bustling Oxford Street, feels like you've stepped into a friend's rustic country home – the natural setting for our signature farm-to-table cooking. Seasonality, locally-sourced produce and a sense of occasion come together in our intimate open kitchen. Take a seat at the marble‑topped kitchen counter and watch the team calmly working with the season's freshest produce, as they cook on an open‑fire hearth. The wine list features the full spectrum of classic wines but also lesser‑known regions and varieties. Carefully tailored to complement our farm-to-table philosophy, it highlights small growers who care deeply about their impact on the land they caretake. Every wine has been selected for a reason, whether it's minimal intervention, organic or biodynamic. The Role In this role you'll be given the opportunity to use your creativity, introduce new and unique offerings to the wine list and take charge of the wine program for one of Merivale's most treasured venues. Working closely with the Head Sommelier, Restaurant Management and broader group Sommelier team, you'll lead and inspire our floor staff and play a key role in ensuring the delivery of exceptional guest service we well as driving revenue and cost results. This is a critical role with Merivale's sommelier group; you'll set the standard for world‑class service and share your wine knowledge with esteemed guests to ensure their experience at Fred's is one they'll never forget. To be successful in the role, you will have: Previous Sommelier experience within a similar high‑end restaurant environment Enjoy working with extensive wine lists Be an inspirational team leader with a proven track record of developing and mentoring the other Sommeliers within your team Have a thirst for knowledge and growth A passion for providing the customer with an outstanding experience This is truly a unique opportunity for passionate Sommelier's who are wishing to broaden their knowledge of not only wines, but systems and service styles as well.
