Lazeeza Restaurant – Fawkner, Melbourne Salary: $78,000 + superannuation Hours: 38 hours per week Position: Full-time Chef Lazeeza is a busy and growing restaurant in Fawkner specialising in authentic Pakistani and North Indian cuisine, with additional influences from Indo-Chinese cooking and Middle Eastern flavours. We are seeking an experienced Chef who can take responsibility for preparing a wide range of regional dishes, managing kitchen operations during busy service periods, and contributing to menu consistency and innovation. The ideal candidate will have strong experience in multi-regional South Asian cooking, confident tandoor skills, and the ability to work across multiple stations in a fast-paced kitchen. Key Responsibilities Plan, prepare, and cook a comprehensive variety of Pakistani and North Indian dishes, including traditional curries, karahis, biryanis, BBQ items, and breakfast dishes, ensuring adherence to established recipes and quality standards. Expertly operate the tandoor oven, including preparation of naan, roti, stuffed breads, and charcoal-smoked items, and demonstrate proper techniques to kitchen staff. Develop and prepare complex regional dishes influenced by different South Asian cities (e.g., Lahore, Karachi, Peshawar, Hyderabad, Delhi), ensuring authenticity and high culinary skill. Contribute to menu planning and produce fusion-style dishes that blend South Asian, Indo-Chinese, and Middle Eastern flavours in line with the restaurant's menu profile. Rigorously monitor and maintain consistency of flavour, portioning, and presentation across all dishes. Explain and enforce high standards of kitchen hygiene, food safety, and allergen management in compliance with HACCP guidelines. Manage daily kitchen operations, including preparation schedules, ordering food supplies, managing stock rotation, controlling wastage, and implementing cleaning schedules. Lead the kitchen team by working collaboratively, discussing food preparation issues, and selecting and training junior staff members. Required Skills & Experience Minimum 1 year experience as a Chef in a commercial kitchen. Strong background in Pakistani and Indian regional cuisines (curries, gravies, biryanis, BBQ, karahis). Practical experience with tandoor cooking and charcoal-based methods. Ability to prepare a variety of dishes influenced by different cities and regions across South Asia. Familiarity with Indo-Chinese (e.g., chilli chicken, Manchurian-style sauces) and Middle Eastern-inspired flavours is highly desirable. Competence in food safety, hygiene standards and kitchen organisation. Ability to work under pressure in a busy environment and manage multiple tasks simultaneously. Certificate IV in Cookery or equivalent qualification is required. Experience in managing daily kitchen operations including preparation, stock rotation, ordering, wastage control and cleaning schedules.
