Set right on Catseye Beach , Sails will showcase light, fresh flavours, premium local seafood, and our signature in-house made flatbread — all prepared in a stunning kitchen featuring a wood-fired oven as the centrepiece. Guests can even choose from a daily seafood display, with their selection cooked to perfection right before them. We’re looking for experienced Sous Chefs who are passionate about simple, beautiful food and creating memorable dining experiences by the beach. Your Role As the Sous Chef at Sails, you will support the Head Chef in leading the kitchen operations, ensuring every dish highlights the restaurant’s focus on fresh, light flavours and wood-fired cooking. You’ll help deliver an exceptional dining experience for guests enjoying relaxed, walk-in beachside service. Roles Available Sous Chef x 2 Where you’ll make an impact Assist in the creation and execution of menus showcasing seasonal produce and daily fresh seafood. Lead kitchen operations in the Head Chef’s absence, maintaining high standards of quality and presentation. Oversee the preparation and cooking from the wood-fired oven, ensuring consistency and excellence. Support the development and training of junior kitchen staff. Work collaboratively with the front-of-house team to provide seamless guest experiences. Maintain strict food safety, hygiene, and workplace health standards. What we’re looking for Certificate III in Commercial Cookery or equivalent qualification. Proven experience as a Sous Chef or Senior CDP in a high-volume or premium dining venue. A passion for coastal-inspired cuisine and fresh, local produce. Strong leadership, organisational, and communication skills. Ability to work under pressure while maintaining attention to detail. To be successful, you will need: A positive, hands-on attitude and commitment to excellence. Creativity and pride in presentation. Flexibility to work a rotating roster, including weekends and public holidays. A strong understanding of kitchen operations and food safety.
